potato soup
What do we want: one more soup recipe! And so here it is: one more soup recipe!
Recipe – potato soup
Amount: 2 portions
Prep time: 20 minutes
1 onion
1 Tsp olive oil
1 garlic clove
1 cup soup vegetables (for example celery, leek, carrot and parsley mixed)
150 g carrot
450 g potato
800 ml water
2 Tbsp soy sauce
1 Tsp maple syrup
1 Tbsp balsamic vinegar
1/2 Tsp each cinnamon, fennel, caraway, pepper
Peel and cube 1 onion. Cook in 1 Tbsp olive oil in a pot until translucent.
Peel 1 garlic clove and cut into small pieces. Add together with 1 cup soup vegetables to the translucent onion and lightly brown.
Meanwhile peel and cut up 150 g carrot and 450 g potato. Once the vegetable in the pot are lightly browned add the carrot and potato. Pour in 800 ml water and 2 Tbsp soy sauce.
Let the soup cook for 10 minutes.
Puree and season with 1 Tsp maple syrup, 1 Tbsp balsamic vinegar and 1/2 Tsp each cinnamon, fennel, caraway and pepper.
Serve the soup with pumpkin seeds, green onion and/or sausages.
