Okonomiyaki
Once again quoting Wikipedia: Okonomi means “taste”, “how you like”; yaki means “grilled” Und therefore an Okonomiyaki is a Japanese pancake grilled to ones own liking.
And that means for me: a large cabbage-carrot cake is grilled in a pan, courageously flipped, and served with a mayo-chili-sauce, spring onion and sesame. But please get creative and cook your own variation: for example with bacon, shrimps or other vegetables. And even though my recipe does not originate from Japan, I hope, that the taste is at least close to the one of an authentic Okonomiyaki.
Recipe – Okonomiyaki
Amount: 4 portions
Prep time: 30 minutes
200 g flour
125 ml miso broth
1 Tbsp soy sauce
1 egg
300 g Chinese cabbage
100 g carrot
2 Tbsp sesame seed oil
2 Tbsp sesame seeds
1 green onion
2 Tbsp ketchup
1 Tbsp Worcester sauce
1 Tbsp maple sirup
1/2 Tbsp + 1/2 Tsp rice vinegar
2 Tbsp mayonnaise
1/2 Tsp chilli sauce
Using a spatula mix together 200 g flour, 125 ml miso broth, 1 Tbsp soy sauce and 1 egg to a smooth but very sticky dough.
Then cut 300 g Chinese cabbage into very fine stripes and coarsely grate 100 g carrots.
Add the Chinese cabbage and the carrots to the dough. Stir together until everything is evenly incorporated.
Now, in a big pan with a matching lid, heat 2 Tbsp sesame seed oil until very hot. Then add the entire dough to the pan and press it down evenly.
Reduce to heat to a more medium temperature and let the flat cake bake under the closed lid for 10 minutes.
Meanwhile, roast 2 Tbsp of sesame seeds and set the aside. Also wash the green onion and cut into small rings.
Stir together the first sauce out of 2 Tbsp ketchup, 1 Tbsp Worcester sauce, 1 Tbsp maple sirup and 1/2 Tbsp rice vinegar. Also mix the second sauce out of 1/2 Tsp rice vinegar, 2 Tbsp mayonnaise and 1/2 Tsp chilli sauce.
After 10 minutes, when the top of the Okonomiyaki is dry, slide it onto a plate. Now, without fear flip the cake back into the pan from the plate. Bake the other side for 5 more minutes without the lid.
In the last minute baste the top of the Okonomiyaki with the first sauce (Ketchup-Worcester) evenly.
To serve, decorate the pieces with the second sauce, the toasted sesame seeds and green onion.
Keeps well refrigerated 2 more days.
