I would like to present: a meal, that I can cook just with the ingredients from my pantry. And therefor the perfect “but we should go grocery shopping, since we have nothing left to eat in the fridge”-meal.
Recipe – Bean stew
Amount: 2 portions
Prep time: 20 minutes
2 garlic cloves
1 Tbsp oil
250 g cooked white beans
250 g cooked kindey beans
125 g corn
500 g pureed tomatoes
500 ml broth
1/2 Tbs maple syrup
1/2 Tbs balsamic vinegar
2 spring onions
Peel and cut cup 1 onion. Also cut up 2 garlic cloves.
Heat 1 Tbsp oil in a pot. Brown the onions in the pot.
Once the onions are a light brown add the garlic. Sautee for just a few seconds.
Then add 250 g white beans, 250 g kidney beans, 125 g corn, 500 g pureed tomatoes, 500 ml broth, 1/2 Tsp maple syrup and 1/2 tsp balsamic vinegar.
Let the stew cook for at least 10 minutes until most of the liquid has evaporated.
Meanwhile wash and cut the spring onions.
Season the stew and serve garnished with the spring onions.
Keeps about 2 days in the fridge.
