Pancakes with fruit salad

Besides waffles and Sunday rolls another breakfast recipe is missing from the blog: classic, american pancakes. In my favorite summer variation, topped with some vanilla-yogurt and lots of fruit salad. For the fruit salad I used mango, apple and banana. But it is also great with peach, nectarine, orange, pear or any other “yellow fruit” of your choice.


Recipe – Pancakes with Fruit Salad

Amount: 2 portions (9 pancakes)
Prep time: 30 minutes


150 g flour
1 Tbsp sugar
1 pinch of salt
3 Tsp (15 g) baking powder
20 g neutral oil (for example sunflower-oil)
150 g milk
1 egg
Oil for the pan

30 g walnuts
1/2 mango
1 apple
1 banana
1 Tsp maple syrup
1 Tbsp orange juice

200 g Greek yogurt
1 Tsp vanilla sugar or 1/2 Tsp vanilla extract
1 Tsp maple syrup


In a large pan toast 30 g walnuts for the fruit salad.

Meanwhile mix together the pancake batter. Stir together the dry ingredients (150 g flour, 1 Tbsp sugar, 1 pinch of salt and 3 Tsp (15 g) baking powder) with a fork in a bowl. Then add the wet ingredients (20 g neutral oil, 150 g milk and 1 egg) and mix everything into a smooth, lump-less batter.

The walnuts should now be toasted lightly. Remove from the pan, but keep the pan on the stove.

By now the pan should be rather hot. Add a bit of oil to the pan and place 3 pancakes in it. Use about 1 Tbsp of batter per pancake. Bake them for about 2 minutes per side, flipping when the top seems almost dry. Keep warm in a 175° F (80° C) oven, while baking the remaining pancakes (total of 9).

In the meantime cut up 1/2 mango, 1 apple and 1 banana into cubes for the fruit salad. Roughly chop the walnuts. Add everything into a bowl and stir together with 1 Tsp maple syrup and 1 Tbsp orange juice.

In another bowl mix 200 g Greek yogurt, 1 Tsp vanilla sugar or 1/2 Tsp vanilla extract and 1 Tsp maple syrup into a smooth creme.

Serve the pancakes topped with the yogurt-vanilla-creme and fruit salad.


The pancakes are drier than German pancakes and thus should always be served with a “sauce”. Whether that sauce is more maple syrup, nutella or a yogurt topping, is up to you.

The pancakes do not keep beyond keeping warm and should be enjoyed freshly baked.
