{"id":1481,"date":"2021-09-25T09:00:00","date_gmt":"2021-09-25T07:00:00","guid":{"rendered":"http:\/\/foodistini.de\/?p=1481"},"modified":"2021-08-01T21:39:48","modified_gmt":"2021-08-01T19:39:48","slug":"kuerbissuppe","status":"publish","type":"post","link":"https:\/\/foodistini.de\/en\/kuerbissuppe\/","title":{"rendered":"Pumpkin Soup"},"content":{"rendered":"<p>What is missing on the blog, and should be found on every kitchen-blog (even if it is a huge cliche) and is a great way to welcome fall: a quick and easy pumpkin soup.<\/p>\n<hr>\n<h3><strong>Recipe &#8211; Pumpkin Soup<\/strong><\/h3>\n<p><em>Amount:<\/em> 2 portions<br \/>\n<em>Prep time:<\/em> 20 minutes<\/p>\n<hr>\n<p style=\"padding-left: 40px;\">20 g pumpkin seeds<br \/>\n1 onion<br \/>\n1 garlic clove<br \/>\n1 piece ginger, aprox 1 cm<br \/>\n1 Tbsp oil<br \/>\n300 g Hokkaido pumpkin<br \/>\n300 g potato<br \/>\n1 cup soup vegetables (for example a mix of carrot, leek, celery, and parsley)<br \/>\n650 ml water<br \/>\n50 ml coconut milk (or for a vegetarian option: Cream)<br \/>\n1 Tbsp soy sauce<br \/>\n1\/2 Tsp pepper and cinnamon<\/p>\n<hr>\n<p>Add 20 g pumpkin seeds to a pot and roast them.<\/p>\n<p>Peel 1 onion and cut it into small cubes. Peel 1 garlic clove and 1 piece of ginger, a cube of aprox 1 cm, and cut into small pieces as well.<\/p>\n<p>Once the pumpkin seeds are brown, remove them from the pot. Add 1 Tsp of oil to the pot as well as the onions. Cook until golden brown.<\/p>\n<p>Meanwhile wash 300 g of Hokkaido pumpkin and cut into cubes. Also peel 300 g of potatoes and cut into cubes.<\/p>\n<p>When the onions are golden brown, add the garlic and ginger. Stir. Add the 1 cup of soup vegetables and roast.<\/p>\n<p>Now add 650 ml of water, 50 ml of coconut milk or cream and 1 Tbsp of soy sauce to the pot. Add the pumpkin and potato and let boil for 10 minutes.<\/p>\n<p>Puree to a fine consistency and season with 1\/2 Tsp each of pepper and cinnamon to taste.<\/p>\n<p>Serve garnished with the toasted pumpkin seeds.<br \/>\n<\/p>","protected":false},"excerpt":{"rendered":"<p>What is missing on the blog, and should be found on every kitchen-blog (even if it is a huge cliche) and is a great way to welcome fall: a quick and easy pumpkin soup.
