With lots of protein from the red lentils and yogurt. And if someone would like a vegan version, just change up the topping and enjoy the soup.<\/p>\n<hr class=\"wp-block-separator\">\n<h3><strong>Recipe &#8211; lentil soup<\/strong><\/h3>\n<p><em>Amount:<\/em> 2 portions<br \/>\n<em>Prep time:<\/em> 20 minutes<\/p>\n<hr class=\"wp-block-separator\">\n<p style=\"padding-left: 40px;\">1 onion<br \/>\n1 Tbsp olive oil<br \/>\n1 garlic clove<br \/>\n1 ginger piece, approx. 1 cm squared<br \/>\n1 cup <a href=\"http:\/\/foodistini.de\/suppengemuese\/\" target=\"_blank\" rel=\"noopener noreferrer\">soup vegetables<\/a> (for example carrot, leek, root celery, parsley)<br \/>\n700 ml water<br \/>\n300 g potatoes<br \/>\n100 g red lentils<br \/>\n1 Tsp lemon juice<br \/>\n1 Tbsp soy sauce<br \/>\n1\/2 Tsp each pepper and cumin<br \/>\n6 Tbsp yogurt<br \/>\nparsley<\/p>\n<hr class=\"wp-block-separator\">\n<p>Peel the onion and cut into cubes. Sautee in a pot with 1 Tbsp olive oil until translucent.<\/p>\n<p>Meanwhile peel 1 clove of garlic and a ginger piece and cut each into small pieces. Add to the translucent onions and stir.<\/p>\n<p>Now add 1 cup of soup vegetables and cook until everything is slightly browned.<\/p>\n<p>Then top up with 700 ml water and scrape the brown bits from the bottom of the pot.<\/p>\n<p>Peel 300 g of potatoes, cut into small cubes and add to the pot together with 100 g red lentils.<\/p>\n<p>Cook covered for 10 minutes.<\/p>\n<p>Now puree the soup. But you want a few chunks to remain.<\/p>\n<p>Season with 1 Tsp lemon juice, 1 Tbsp soy sauce, and 1\/2 Tsp each of cumin and pepper.<\/p>\n<p>Serve each portion garnished with 3 Tbsp yogurt and parsley.<\/p>\n<hr class=\"wp-block-separator\">\n<p><em>Soup will keep in the fridge without the yogurt topping for about 3 days.<\/em><br \/>\n<\/p>","protected":false},"excerpt":{"rendered":"<p>Complementing my vegetable tip from last week, todays recipe is for a quick lentil soup.
